Republic, located in the middle of an industrial zone opposite a supermarket, will surprise you. We are warmly welcomed in an elegant, tastefully decorated brasserie. The menu is Mediterranean style with a vegan section. We recommend trying calamar à la plancha, beef carpaccio, or crisp asparagus with polenta to start your meal. The fish shawarma is also a good choice: this by now classic Israeli dish is very well seasoned, with refreshing arugula, and crunchy pine nuts. It is a generous portion. If you want a light dish, go for the grilled salmon featuring a still pink in the center, golden on the outside salmon filet on a bed of green vegetables (chard, broccoli, zucchini slices) and pea cream that ties it all together on a creamy note. As you have been reasonable so far, you can indulge in the delicious desserts including an excellent crème brûlée, with wonderfully smooth, light cream and a delicate, crunchy burnt sugar coating, or try the sublime Canoli Chocolad: a delicate chocolate lace crepe rolled in cannelloni around a praline cream with a very smooth chocolate ice cream quenelle. It has a strong not too sweet chocolate flavor and excellent texture. This lovely place is definitely worth the visit.
